A note from the winemaker:
Block 5 are more recent plantings of Cabernet Sauvignon on the Wild Dog
Vineyard, going in on the northern tip of Block 5 in 1988. Block 5 is south facing
on a gentle slope and ripens much later than Block 2. Grapes were all de-
stemmed and kept on skins in open fermenters for 5 weeks with a gentle plunge
each day. Pressed to Austrian oak puncheons where they remained for 9 months
then racked twice and sulphured once in the lead up to bottling. Only 53 dozen made.
Our wines are wild ferment, unfiltered, unfined and vegan friendly
